Bring a large covered pot of water to a rolling boil over high heat. Carefully add the beets to the pot using tongs to avoid backsplash. Boil for 25 to 30 minutes, or until tender when pierced with a fork. Remove from the heat. Drain the beets, then place them back into the pot to let them cool. When the beets are cool enough to handle, put on the gloves again and trim off the beet tips. Then rub off and discard their skins. While the oil is heating, dip the bread slices one at a time into the bowl, allowing them to soak for at least 1 minute per side to fully absorb the egg mixture before transferring them to the skillet. Place two slices in the pan and cook for 1-1/2 to 2 minutes per side, or until golden brown. Repeat with the next 2 slices. Transfer the toast to 4 plates and serve immediately. Place a cinnamon shaker (or small custard dish of cinnamon) and the dispenser of apricot sauce on the table to allow your guests to top their toast according to their own preferences.
